So, grilled bugs actually refers to types of crustaceans, specifically, Moreton Bay bugs and Balmain bugs which are in the lobster family… which we cannot order, but the spiny lobster is close. We aren’t serving actual insects (although fun fact: Australia has recently approved multiple insect species for consumption… maybe another menu).
slow cooked in white wine and butter served with asparagus, pickled red onions, and balsamic reduction
a rich red meat poultry prepared in similar fashion to beef, grilled to order and basted in brown butter served with mashed potatoes and vegemite infused demi glace
decadent dessert composed of whipped meringue baked crisp served with fresh wild berries and vanilla cream
