As professional chefs we pride ourselves in using fresh local ingredients whenever possible, and as part of this effort, we have grown a partnership with owner of TGW agriculture, Gary Wilson, to have greenhouses operating on our grounds. Gary manages one hydroponic and one in-ground greenhouse on site where we can purchase fresh produce at a moment’s notice. TGW agriculture would like to extend the same offer to the patrons of Compass Rose café by allowing customers to order fresh produce from these facilities as well.
